Vegan – Gluten/Wheat Free – Soy Free
(Contains Almond Milk – Can Substitute with any milk of choice)
The first time I heard of pudding made with Avocados, I was a little skeptical. Avocados were for GUACAMOLE!…NOT PUDDING right?! Well…Wrong!! And this recipe proves that!
I decided to keep an open mind and give it a shot…I mean, I had put Avocados in Smoothies before; but with berries and protein powder, you could never taste the Avocado and I knew they added many health benefits.*
Being Vegan you need to get “Good Fats” in your diet and even if you’re not Vegan, this is a dessert and/or snack that satisfies your sweet tooth and allows you to indulge without feeling guilty and bloated. Plus the added nutritional benefits is a plus. That’s a WIN WIN in my book!
You might be saying, but I don’t like Avocados…well welcome to my world until about two years ago. I never really got into this Fruit. Yes, Avocados are a Fruit…weird I know. I had actually never given them much of a chance though. But the best part about this recipe, you DON’T even taste the Avocado. The banana cuts the taste of this green fruit and of course the dark cocoa powder is the dominate taste.
Just give it a try…you won’t regret it!
For the topping, I crushed up Almonds and sprinkled on top.
Other great toppings are:
Fresh berries – Raspberries or Strawberries are delicious!
A sprinkle of Sea Salt or Chili Powder
Whipped Cream with shaved Dark Chocolate
Leave a comment about what your favorite topping is; I’d love to hear!
